Hot chocolate and marshmallows are definitely a family favorite here at our house.  We can’t keep the hot chocolate stocked up fast enough, because we go through it like crazy during the winter months.  Hot chocolate is the best, right? 

I have so many fond memories of enjoying hot chocolate growing up.  We would take huge scoops of Nestle Quik and add it into our hot milk in our favorite mugs and it was so yummy! 

The best part was adding lots and lots of puffy marshmallows and letting them melt into the hot chocolate and not burn your tongue, while in the process of sipping! It sure hit the spot after all those chilly football and basketball games. Brrrrr!

Ingredients You Need

First, for this hot chocolate marshmallow cookie recipe, decide if you want to use hot chocolate cocoa mix or 100% cocoa powder, then once you’ve baked these up, you’ll taste the delicious chocolate flavor actually baked right in the cookies, along with some gooey marshmallow bits and milk chocolate chips!

Instructions How to Make Hot Chocolate Cookie Recipe with Marshmallows

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa. Set aside.
  3. In a large bowl, using an electric mixer, cream butter and sugars together until smooth. Add in eggs and mix together well.

Adding All The Goodies

  1. Gradually add flour mixture and beat until just combined. Stir in the chocolate chips and the marshmallows. Scoop the dough into rounded tablespoons or use any size cookie scoop and place dough balls on prepared baking sheet, about 2 inches apart.  Leave a bit of space between them, as they will spread a during baking.
  2. Bake cookies for 8-12 minutes, depending on size and remove the baking sheet from the oven or until the cookies are set around the edges but still soft in the center.
  3. Remove from oven. Press more marshmallows and chocolate chips gently into the tops of the cookies.  Can top off with flaky sea salt or sprinkles if desired. 
  4. Let the cookies sit on the baking sheet for 5 minutes before removing them with a spatula. Move to a cooling rack and cool completely.

Store the cookies in an airtight container on the counter for up to 4 days. 

Baking Hot Chocolate Cookie Tips

  • Before you measure flour and the cocoa powder, make sure you fluff it up with a spoon or fork. Don’t scoop it packed up. Put the flour into the measuring cup and let it form a heap over the rim. Then use a knife to scrape away any excess flour from the top of the cup so it’s not packed down.
  • The key to making even thicker or chunkier cookies is to put scoops of cookie dough in the refrigerator or freezer for 10-15 minutes before baking.  You can also use colder butter than normal room temperature butter to get thicker cookies. Leave a bit of space between them, as they will spread during baking even if you do make them thicker.

How Long Should I Bake These Cocoa Marshmallow Cookies?

Firstly, DO NOT over bake these hot cocoa cookies or they won’t have the soft, chewy and gooey texture you want.

The cookies are best when the cookies are just set on the tops, when you take them out of the oven. I like my cookies extra soft and gooey, so I tend to underbake these types of cookies because I know they will continue baking on the cookie sheet once I pull them from the oven to cool. And underbaking is better than overbaking when baking these cookies!

  • Add a touch of cinnamon, chai spice or espresso powder for a delicious twist.
  • Love candies? Add some red and green m&m’s for a festive touch.
  • Don’t have mini marshmallow bits?  Add a big sized marshmallow on top of cookies by cutting the marshmallows in half after the cookies have baked.  If you want the marshmallow toasted, place the cookies back in the oven for a few minutes or use a hand-held torch.

  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 2 ¼ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups milk chocolate chips can add more if desired, plus add more for tops (can also use white chocolate chips)
  • ¾ cup 100% cocoa powder or hot cocoa mix or a mixture of either can also be used
  • 1 cup mini marshmallow bits plus more for tops
  • Optional sea salt or Christmas sprinkles
