  • 1 large egg

  1.  Preheat oven to 375 degrees and line a muffin pan with cupcake liners and lightly spray with non-stick cooking spray, or omit the cupcake liners and spray muffin tins with non-stick cooking spray.
  2. In a large mixing bowl, add the mashed banana, sugar, egg, melted butter and vanilla together and stir until combined.
  3. Add the flour, baking powder, cinnamon and salt in another bowl and whisk together, then add to the wet ingredients and combine all the ingredients together until the flour is just moistened, without over-mixing batter.  Gently fold in the walnuts.
  4. Use an ice cream scoop to fill 12 muffin cups and bake for 20 minutes.
  5. Let banana muffins cool for 10 minutes then transfer to a wire rack to continue cooling off.
