Homemade Butterscotch Pudding Pie Recipe

  1. In a medium-sized saucepan, whisk together the milk, brown sugar, egg yolks, cornstarch, and salt until mixed well on medium-high heat.
  2. Cook until the pudding is thick, making sure to stir mixture constantly for 5 minutes or so.
  3. Once the pudding has thickened, turn off the heat and add the vanilla extract and butter, mixing until the butter is melted.
  4. Pour the butterscotch filling into a pre-baked pie shell or a store-bought prepared graham cracker pie crust and place in fridge covered with saran wrap or foil.

Freshly Whipped Cream (can also use Cool Whip for a shortcut)

  1. Using a hand mixer, whip together the heavy cream and powdered sugar until you get light and fluffy stiff peaks. Make sure not to over whip the whipped cream.
  2. Top or pipe with whipped cream before serving or after pie has cooled.
  3. Pie can be stored in the fridge for up to 2-3 days.  Make sure to cover with plastic wrap or store in an airtight container.
