I probably don’t even to twist your arm, besides breakfast for dinner has been popular ever since I can remember. I remember my mom said her mom would often make breakfast for dinner. She had 14 brothers and sisters, which is like whoa!! Right?
My mom would make pancakes for dinner as a special treat when dad would go out of town for business trips. She made the most amazing, vanilla simple syrup–that was too die for. It soaked the pancakes and with the most amazing vanilla flavor and it is my absolute favorite way to eat them.

You can not go wrong with good old-fashioned buttermilk pancakes, so I made those for our ‘breakfast for dinner’ and I also had an intense, hankering for some peanut butter pancakes.
I made those by adding in some peanut butter and vanilla extract to the pancake batter. The peanut butter adds a subtle nutty flavor to them, BUT…

For even more peanut butter…I made a super easy 2-ingredient peanut butter maple syrup and if you’re feeling a little daring, add some chocolate chips, raspberry or strawberry preserves, chocolate syrup and/or whipped cream! These are great with just maple syrup too.

The pancakes were so light and fluffy, just the way you would expect. 🙂 Soo good! They are great for refrigerating and freezing for later and I always make extra for this reason.
Btw..I want to mention that I used a a non-stick T-fal Fry Pan that was provided to use with the Krusteaz products. It rocked! You can stock up by purchasing at your nearest Target and target.com from Feb 27th – March 3rd in honor of Pancake Day!
Ingredients You Need
Peanut Butter Maple Syrup
- maple syrup
- peanut butter
How to Make Peanut Butter Pancakes
Peanut Butter Pancakes
- Melt peanut butter in microwave for 30 seconds or until melted.
- Mix all ingredients in a large bowl. Batter will be slightly lumpy.
- Let batter sit for 2 minutes.
- In meantime, lightly grease griddle and start preheating to 375 degrees. You can also use a non-stick fry pan using medium-high heat.
- With a ¼ cup dry measuring cup, scoop batter onto griddle.
- Cook pancakes 1 – 1 ½ minutes per side, or until golden brown, turning only once.
Peanut Butter Maple Syrup
- In microwave safe bowl or measuring cup, combine peanut butter and syrup.
- Microwave for 30 seconds, then stir.
- Microwave thirty seconds more and stir until creamy and well combined.
- Pour syrup between layers of pancakes and devour!!
