Blueberry Crisp with Oats Recipe

Crisp Topping

  • 8 tablespoons unsalted butter, 1 stick
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour or gluten-free all-purpose flour blend for gluten-free recipe
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions How to Make Our Quick & Easy Blueberry Crisp

  1. Preheat the oven to 375°F. Spray an 8×8-inch baking dish with non-stick cooking spray.  

Make the crisp topping

  1. In a medium bowl, cut 8 tablespoons unsalted butter into 8 pieces and place in a small microwave-safe bowl. Microwave in 20-second bursts until mostly melted, 40 to 50 seconds total. Set aside to cool slightly. Add in the all-purpose flour or gluten-free all-purpose flour blend, brown sugar, vanilla extract, cinnamon and salt to the bowl and stir to combine. 
  2. Add in the old-fashioned rolled oats and stir to combine. 
  3. Refrigerate for at least 5 minutes or until ready to use.

Blueberry Filling 

  1. In the prepared pan, add the blueberry filling and spread it out evenly, then add the fresh blueberries on top.
  2. Sprinkle the crisp topping on top of the blueberry filling and place in the oven to bake for 35-40 minutes and the filling is bubbling. 
  3.  Let cool for at least 15 minutes before serving.  Top with a scoop of vanilla ice cream or whipped cream if desired.
